The brand was founded in the late 1970s by Fritz and Burgi Bläuel, Austrian pioneers who moved to Greece and collaborated with local farmers to establish the country's first certified organic olive oil production.

The capers are hand-harvested in Greece and preserved in the brand's own award-winning extra virgin olive oil rather than vinegar, maintaining a natural, spicy-tangy flavor. Today, the company remains under the ownership of the Bläuel family, with the second generation—Felix and Julia Bläuel—overseeing operations.
