The product shown is Spaghetti alla Chitarra, a traditional square-edged variety, crafted using 100% Italian durum wheat. As a 'Pasta di Gragnano IGP' (Protected Geographical Indication), the production process is strictly regulated to ensure it meets traditional standards, including the use of bronze dies and slow drying processes which result in a rough surface that holds sauce exceptionally well.
Today, Pastificio Liguori remains an independent Italian entity, maintaining its deep-rooted heritage in the Campania region. The company is family-owned and operated, ensuring that centuries of pasta-making expertise are preserved. Their facilities in Gragnano take advantage of the local microclimate, which has historically provided the ideal conditions for natural drying, making their pasta a benchmark for quality in the international market.
