Basque cheesecake

Basque cheesecake, recognized for its distinctive burnt, caramelized exterior and creamy, crustless interior, is a globally celebrated dessert that originated in the Basque Country of Spain. The recipe was famously pioneered by Santiago Rivera in the late 1980s or early 1990s at his family-run pintxo bar, La Viña, located on Calle 31 de Agosto in San Sebastián. Unlike traditional New York-style cheesecakes, this version is baked at high temperatures to achieve its signature look and texture without the need for a biscuit base or water bath.

While the original 'Tarta de Queso de La Viña' remains a local staple produced in San Sebastián, the concept has become a global food phenomenon. Today, Basque cheesecakes are manufactured and sold by various specialized bakeries (such as La Maritxu in London), grocery chains, and artisanal producers across the world. Ownership of the 'Basque' label is geographical and cultural rather than corporate; however, the original recipe remains with the Rivera family's establishment, La Viña, which continues to operate as an independent, family-owned business in Spain.
