Gullón Choco Digestive biscuits are produced by Galletas Gullón, S.A., one of Europe's leading biscuit manufacturers. The company was founded in 1892 by Manuel Gullón in Aguilar de Campoo, Spain, a region historically rich in wheat production. Gullón is credited with introducing the concept of the biscuit to Spanish society and has since become a pioneer in the 'health biscuit' segment, launching the first wholemeal biscuit in Spain in 1979.

Manufacturing is primarily concentrated at their technologically advanced facilities in Aguilar de Campoo, Palencia. The Gullón II factory is noted as one of the largest and most automated biscuit production sites in Europe. Despite the global trend of mergers and acquisitions in the snack industry, Gullón remains a family-owned independent Spanish company, currently led by the descendants of its founder. Their products, known for emphasizing health and high-quality ingredients like high-oleic sunflower oil, are exported to over 120 countries worldwide.
