Castello Tickler is a premium extra-mature cheddar produced in the heart of the Devonshire countryside in England. It is specifically manufactured at the Taw Valley Dairy, which is known for utilizing traditional cheddar-making methods and sourcing milk from local cows that graze on lush pastures year-round. This particular cheese is matured for approximately 17 months, resulting in a complex flavor profile characterized by sweet, tangy notes and a unique, crumbly texture with salty protein crystals.

While the cheese itself is British in origin and production, the Castello brand carries a rich Danish heritage. It was originally established in 1893 by master cheesemaker Rasmus Tholstrup in Denmark. For much of the 20th century, it was managed by the Tholstrup Cheese Company until it was acquired in 2006 by Arla Foods. Today, Castello operates as one of the primary global brands under the Arla Foods portfolio, blending traditional artisan craftsmanship with the scale of a major international dairy cooperative.
