Unlike mass-produced potato chips found in retail, Potato Project operates as a high-quality 'friterie' concept. Their signature frites (fries) are hand-cut daily from fresh, AAA-grade potatoes sourced directly from local farmers in Portugal.

The brand's philosophy, 'Greatness from the Ground,' emphasizes traditional Dutch techniques, including importing specific oils and authentic sauces from the Netherlands. The preparation involves a meticulous double-frying process: first, a low-temperature blanching to break down starches, followed by a high-temperature finish to achieve a crispy golden exterior and soft interior.
