Lyons & Co. through its subsidiary Symbol Biscuits in Blackpool, the brand was a pioneer in introducing the crunchy, American-style chocolate chip cookie to the UK market. The recipe, which remains a staple of British tea times, often draws comparisons to a chocolate chip shortbread due to its distinctive crumbly texture.

Over the decades, the brand has transitioned through several major corporate owners. Following the sale of Lyons Biscuits in 1994, the brand eventually became part of the Burton's Biscuit Company portfolio in 2000. In 2021, Burton's was acquired by a Ferrero-affiliated company, leading to the formation of Fox's Burton's Companies (FBC UK). Today, Maryland stands as the UK's leading cookie brand, with massive production volumes primarily out of manufacturing sites in the United Kingdom, including locations in Blackpool and Llantarnam.
