The brand name is derived from 'payoyo,' the traditional nickname for residents of Villaluenga del Rosario. Production began in 1997, focusing on the use of milk from local breeds, specifically the Payoya goat (and sometimes Grazalema Merino sheep). Although the term is often associated with the specific goat breed, 'Payoyo' is legally a private brand rather than a protected designation of origin (D.O.P.).
The cheese is manufactured exclusively in Spain at the company's facilities in the province of Cádiz, supporting dozens of local livestock farmers. Since its inception, the brand has gained international fame, winning hundreds of prestigious accolades such as the World Cheese Awards, and is exported to numerous countries across Europe, Asia, and North America.
