The brand was established in 1870 in Pontedera, Tuscany, by Luzio Crastan, a Swiss entrepreneur who aimed to provide a high-quality, affordable alternative to pure coffee.

Starting originally with chicory-based products, the company transitioned its focus toward barley in the 1960s. Today, Crastan is a major industrial producer in the sector, sourcing its barley exclusively from certified Italian farms to ensure a 100% Made in Italy product. In November 2019, Crastan S.p.A. was acquired by Prontofoods S.p.A., a leader in the soluble beverage market known for its Ristora brand, though the Crastan family remains involved as minority shareholders to maintain the brand's local heritage and production in Tuscany.
