Sydney Brewery is a prominent Australian craft brewery that operates production facilities in New South Wales. Originally established in 2005 as the Schwartz Brewery in the basement of the Macquarie Hotel in Surry Hills, the brand underwent a significant transformation and rebranding to its current name in 2012.

The brewery is a core component of the Schwartz Family Company (SFC), a large privately-owned hospitality group directed by Dr. Jerry Schwartz. Manufacturing originally took place in Sydney's inner city before expanding to a large-scale production facility in Lovedale, located in the Hunter Valley region. As of 2025, the brand has entered a major expansion phase, acquiring the assets of Rocks Brewing Company and White Bay Brewery. This has allowed Sydney Brewery to return its manufacturing focus to Sydney with new dedicated sites in Alexandria and Rozelle, complementing their longstanding Hunter Valley operations. The brand is well-known for naming its core range after various Sydney suburbs, such as Paddo Pale and Darlo Dark, reflecting its deep roots in the city's local identity.
