Maison Fallot is one of the last remaining independent, family-owned mustard mills in France, situated in the heart of the Burgundy region in Beaune. Known for maintaining traditional artisanal methods, the brand is world-renowned for its use of stone-grinding wheels that preserve the heat and pungent essential oils of the mustard seeds. Their range includes classic Dijon varieties as well as flavored mustards that incorporate local ingredients like blackcurrant, honey, and tarragon.
While many global mustard brands have shifted toward industrial mass production, Fallot has maintained its heritage by sourcing high-quality seeds and vinegars and grinding them precisely as they did in the 19th century. The company remains deeply rooted in Beaune, where it operates a museum and workshop dedicated to the history of mustard making. Because it is controlled by the Fallot family, the brand avoids the centralized industrial ownership typical of its competitors, such as those owned by Unilever or McCormick.
