This specific variety, 'Sobre la Madre,' is a traditional technique where the cider is aged for months on its lees (the sediment or 'madre'), resulting in a more complex, expressive cider with a distinct character and body.

Today, the brand remains under the management of the Trabanco family, specifically through the company Grupo Trabanco. They maintain high quality standards by using their own apple plantations and selecting specific indigenous varieties to ensure the authenticity of the Asturian cider-making process.
