The baker Jan Boone Sr. created a caramelized cookie made from natural ingredients, naming it 'Lotus' after the flower that symbolizes purity. The cookie became a staple in European coffee culture, known as 'speculoos' in Belgium and the Netherlands. Its unique caramelized flavor and crunchy texture made it the perfect accompaniment to coffee, leading to the 'Biscoff' name—a portmanteau of 'Biscuit' and 'Coffee'—for international markets.

Over the decades, the brand expanded from a local favorites to a global phenomenon, particularly after partnering with airlines to serve the cookies as in-flight snacks. In 2007, the brand introduced Biscoff Spread, a creamy or crunchy spreadable version of the cookie, which further accelerated its global popularity. Today, Lotus Bakeries maintains its primary production facilities in Belgium to ensure the traditional taste, while also establishing manufacturing plants in the USA and Thailand to meet surging international demand.
