Mascarpone is a traditional Italian soft cheese that traces its roots back to the late 16th and early 17th centuries in the Lombardy region of Northern Italy. Highly regarded for its smooth texture and rich, ivory-colored creaminess, it has become a staple ingredient globally, most notably recognized as the foundational component of the dessert Tiramisu.
Historically, the cheese was produced primarily in the Cascina di Melzo, an area between Lodi and Abbiategrasso. Because 'Mascarpone' is a generic dairy term and not a Protected Designation of Origin (PDO) brand, it is produced by a multitude of global and local dairy manufacturers including Galbani, Zanetti, and Sterilgarda. While the highest quality versions are still manufactured primarily in Italy using local cow's milk and citric acid for coagulation, the global popularity of Italian cuisine has led to widespread production in many other countries.
The brand landscape for Mascarpone is diverse. Leading international brands like Galbani are often owned by larger conglomerates, such as the French dairy giant Lactalis. However, many consumers still prefer traditional Italian labels that maintain the heritage and artisanal production methods synonymous with the Lombardy region.
