Cathedral City is a predominant brand of cheddar cheese in the United Kingdom, recognized for its distinctive deep-red packaging and cathedral-inspired logo. The brand was established in 1966 and famously takes its name from Wells Cathedral in Somerset, the region synonymous with the origins of cheddar cheese. It has grown to become the UK's leading cheese brand, known for its consistent quality and grading process led by master graders.

The product is primarily manufactured at the Davidstow creamery in Cornwall, England. This facility processes high-quality milk from local West Country farms, ensuring the cheese maintains its specific flavour profile throughout the maturation process. The Extra Mature variety, as seen in the image, is typically matured for up to 14 months to achieve its characteristic strength and crumbly texture.

While originally a British creation, the brand is now under international ownership. It was acquired by the French dairy giant Saputo Inc. (through its UK division) as part of a major acquisition of Dairy Crest in 2019. Since then, the brand has expanded its global footprint, being exported to various markets including North America and Europe.
