Senfter Schweinshaxe (Pork Knuckle) is a traditional Alpine meat product produced by the Senfter brand. Founded in 1857 in San Candido (Innichen), South Tyrol, Senfter is deeply rooted in the culinary traditions of the Dolomite region. While the brand maintains its historical identity as a South Tyrolean specialty producer, it is currently owned by Grandi Salumifici Italiani (GSI), one of Italy's leading meat production groups. GSI itself is a subsidiary of Unibon, an Italian cooperative. Production for these items primarily takes place in San Candido and other specialized facilities in the northern regions of Italy, adhering to strict quality standards and authentic recipes.
