Dong Lai Shun is a globally recognized 'China Time-honored Brand' that was established in 1903. Its origins trace back to the Wangfujing area of Beijing during the Qing Dynasty, when founder Ding Deshan, an ethnic Hui Muslim, opened a modest porridge booth. By 1914, the business transitioned into the Dong Lai Shun Mutton Restaurant, quickly becoming famous for its 'shuan yang rou' (instant-boiled mutton) hot pot. The brand is celebrated for its commitment to traditional culinary arts, specifically its use of hand-cut, paper-thin mutton and traditional copper pots heated by charcoal.

In the mid-1950s, the restaurant underwent significant change during China's period of socialist transformation, becoming a public-private partnership. Today, the brand is owned by the Beijing Dong Lai Shun Catering Group, which is a key part of the state-owned Beijing Tourism Group (BTG). While its heart remains in Beijing, Dong Lai Shun has expanded into a massive chain with locations across China and international branches in cities like Hong Kong, ensuring its heritage of authentic Halal-style Northern Chinese cuisine reaches a modern global audience.
