Historically, the brand emerged through the cooperative movement in Catalonia, where local farmers united to commercialize their production. Today, Copirineo operates under the umbrella of the Cadí cooperative (Cooperativa Cadí), which maintains a Protected Designation of Origin (PDO) for several of its artisanal products. The manufacturing process remains concentrated in Spain, ensuring the preservation of traditional pastoral methods and support for the local rural economy.
