The brand's history dates back to 1793 in Salò, on the shores of Lake Garda, where it began as an apothecary shop owned by the Tassoni family. The signature Cedrata was first introduced in the 1950s and has since become a symbol of Italian craftsmanship and vintage style.

The product is famously made using 'Cedro Diamante' (Diamond Citron), a rare citrus fruit primarily sourced from the Calabria region of Southern Italy. The manufacturing process involves extracting essential oils from the peel to create the natural aroma that defines the drink. To this day, production remains centered in Salò, Italy, preserving the local heritage of the brand.

Historically a family-run enterprise under the Redaelli family for over a century, the brand entered a new era in 2021 when it was acquired by the Lunelli Group. This acquisition integrated Tassoni into a larger portfolio of premium Italian beverage brands, ensuring its continued presence in global markets while maintaining its strictly Italian roots.
