TABASCO® is one of the most recognized condiment brands in the world, famous for its original red pepper sauce. The brand's history began in 1868 on Avery Island, Louisiana, where Edmund McIlhenny first grew Capsicum frutescens peppers and aged them with salt and vinegar. This artisanal process, involving three years of aging in white oak barrels, remains the signature method for producing the sauce today.
Remarkably, the company has remained family-owned and operated for over 150 years. All production of the original sauce still takes place at the facility on Avery Island. The peppers were originally grown exclusively on the island, but as demand grew globally, the company expanded farming operations to South and Central America to ensure a consistent supply. However, the essential 'seed stock' is still grown on Avery Island, and every batch of sauce is blended and bottled there before being exported to over 195 countries and territories.
