Birkel Schwäbische Spätzle

Birkel is one of Germany's most historic and recognized pasta brands, founded in 1874 by Balthasar Birkel in Schwaigern. Known for its 'No. 1 Quality' claim, the brand specialized early on in egg-based pasta varieties, particularly Swabian specialties like the Spätzle shown here. The product's packaging features the PGI (Protected Geographical Indication) seal for 'Schwäbische Spätzle', which legally ensures the product is produced in the Swabia region according to traditional standards.

Over the decades, the company ownership shifted from family hands to various corporate entities. Today, Birkel and its sister brand 3 Glocken are owned by the Newlat Group, an Italian multinational agro-industrial company. Despite being owned by an Italian parent company, production remains heavily rooted in Germany to maintain the authentic regional specifications of the Swabian pasta styles.
