Inés Rosales is a quintessential Spanish brand specialized in the production of traditional Olive Oil Tortas (Tortas de Aceite). The brand’s history dates back to 1910, when Inés Rosales Cabello began baking these handmade specialties in her kitchen in Castilleja de la Cuesta, Seville. Using a traditional recipe involving extra virgin olive oil, wheat flour, and various sweet or savory spices, she originally sold them at the local train station before the product gained national fame.

Today, the brand remains deeply rooted in its Andalusian heritage. While the company underwent ownership changes following the founder's death and a period under an investment group, it was revitalized in 1985 by a group of businessmen led by Juan Moreno. Production continues to be centered in Huevar del Aljarafe, Seville, where the tortas are still patted and shaped by hand before baking, maintaining their 'Traditional Specialty Guaranteed' (TSG) status. The brand has expanded globally while remaining a symbols of Seville's gastronomic tradition.
