Provansal (Провансаль) is a genericized brand name that originated in the Soviet Union based on the French 'Mayonnaise de Provence'. In 1936, the first production of this specific 67% fat mayonnaise formula began at the Moscow Margarine Factory. While initially a specific product name, it became a standardized technical designation across the USSR food industry.

Today, 'Provansal' is produced by dozens of unrelated companies across Russia, Ukraine, Belarus, and Kazakhstan. Because it is considered a generic recipe or 'GOST' standard product rather than an exclusive trademark of one firm, its manufacturing location depends entirely on the specific producer. Major owners of specific 'Provansal' branded lines include the Efko Group, Solnechnye Produkty, and various regional fat/oil processing plants.
