Olomoucké tvarůžky, also known as Olomoucké syrečky, is a traditional Moravian ripened cheese with a history dating back to the 15th century. It is a unique skimmed milk cheese characterized by its low fat content, pungent aroma, and distinctive spicy flavor. The cheese is traditionally hand-shaped into small wheels, rings, or sticks and undergoes a specific ripening process involving bacterial cultures that create its signature gold-yellow surface.
Since 1876, the production has been synonymous with the town of Loštice and the A.W. company. This company was founded by Josef Wessels and named after his son, Alois Wessels. Despite nationalization durante the communist era, the company was returned to the descendants of the original founders in 1991. The product enjoys protected status within the European Union under the Protected Geographical Indication (PGI) scheme, ensuring that only cheese produced in the Haná region of the Czech Republic using traditional methods can carry this name.
