Mahonesa is the original Spanish name for what is globally known as mayonnaise. Historical records and culinary traditions suggest that the sauce originated in the city of Mahón, located on the Balearic Island of Menorca, Spain. According to local history, it was originally a mixture of garlic and oil, known as alioli, which evolved into the egg-emulsion sauce we recognize today. The sauce gained international fame after it was introduced to France following the Siege of Port Mahon in 1756 by the forces of the Duke of Richelieu.

Today, 'Mahonesa' is not a single protected brand name but a generic term for the type of sauce. It is manufactured by hundreds of different food companies globally, including giants like Unilever (Hellmann's) and Kraft Heinz, as well as numerous local Spanish traditional brands. Because it is a generic condiment, its manufacturing location depends entirely on the specific commercial brand purchased, which could be produced anywhere from Spain and the United States to various industrial hubs across Europe and Asia.
