Shun Cutlery is a premium kitchen knife brand that represents the pinnacle of Japanese craftsmanship. The brand originated in Seki City, Japan, a location with a 700-year history of blade-smithing. Specifically, the Shun Premier line is a collaboration with well-known German chef Tim Mälzer, combining Japanese precision with Western culinary needs.
Every Shun knife is handmade in Seki City, requiring at least 100 handcrafted steps to complete. The blades are typically made from VG-MAX steel clad with layers of Damascus stainless steel, resulting in the iconic 'Tsuchime' hammered finish visible in the image. This finish not only adds aesthetic value but also serves a functional purpose by reducing drag and preventing food from sticking to the blade.
Shun is a brand under the KAI Group, a global manufacturer of cutlery and related products headquartered in Tokyo. The company remains a family-owned enterprise, with leadership passing through generations of the Saijo family since its founding in 1908.
