Filinchen is a traditional German crispbread brand with roots dating back to 1946 in Apolda, Thuringia. Originally created by baker Oskar Johannes Gottschalk, the brand's name was inspired by a childhood nickname for his wife, Felicitas. It became a well-known staple in the GDR and successfully transitioned into a modern market brand after the German reunification. Today, Filinchen is produced in the same city of its origin, Apolda, by Gutena Nahrungsmittel GmbH. The manufacturing process utilizes traditional waffle iron baking techniques to achieve its signature light and crispy texture, maintaining its heritage as a classic East German specialty reaching consumers worldwide.
