Gouda cheese originated in the city of Gouda in the Netherlands, with records of its trade dating back to the 12th century. Unlike some other European cheeses, the name 'Gouda' is not protected by a Protected Designation of Origin (PDO) for the general product, meaning that cheese labeled as 'Gouda' can be produced anywhere in the world using the traditional washed-curd process.
However, specific varieties such as 'Boerenkaas', 'Noord-Hollandse Gouda', and 'Gouda Holland' carry protected status and must be produced in the Netherlands using Dutch milk. Because it is one of the most popular cheeses globally, it is manufactured on a massive scale across Europe, North America, and Oceania by various dairy cooperatives and private food corporations.
Ownership of Gouda brands varies significantly depending on the specific label. Major Dutch dairy cooperatives like FrieslandCampina represent a significant portion of its authentic heritage, while global food giants and private label supermarket brands also produce their own versions. The cheese remains a staple of Dutch culture and a dominant force in the international dairy market.
