The brand's history dates back to 1789 when Michele Garofalo obtained a royal license for pasta production. Garofalo pasta is renowned for its high quality and is protected by the IGP (Indicazione Geografica Protetta) certification, which ensures that the pasta is produced in the specific geographical region of Gragnano using traditional methods and high-quality durum wheat.

In 2014, the Spanish multinational food group Ebro Foods acquired a majority stake (52%) in Pasta Garofalo, while the Menna family, who had led the company for generations, retained a significant minority share and continued to manage operations. As of 2024 and beyond, Garofalo remains a premium brand within the Ebro Foods portfolio, benefiting from international distribution networks while maintaining its manufacturing roots in Italy to honor its IGP status.
