Rücker Alt-Mecklenburger cheese

Rücker is a long-standing German family dairy enterprise founded in 1890 in East Prussia, later re-establishing itself in Northern Germany. The Alt-Mecklenburger variety is one of their flagship products, traditionally naturally ripened on spruce wood boards, which gives it its characteristic creamy yet strong flavor. The milk used for production is sourced from regional 'coastal farmers' (Küstenbauern) in Northern Germany.

The brand remains entirely family-owned, currently managed by the fourth and fifth generations. Manufacturing is primarily concentrated at their specialized dairy facilities in Aurich (Lower Saxony) and Wismar (Mecklenburg-Vorpommern). The company maintains its independence as a medium-sized venture (Mittelstand), focusing on North German dairy traditions and international exports.
