Its story began in the late 1960s when it was launched by Mendip Foods, taking its name from the historic city of Wells and its famous cathedral. The majority of Cathedral City cheese is manufactured at the Davidstow Creamery in Cornwall, England. This facility sources milk from over 300 local dairy farms in the South West, utilizing some of the most advanced cheese production technology in Europe. The brand emphasizes its West Country heritage as a key component of its product identity.

Ownership of the brand has transitioned through major dairy conglomerates over the decades. Originally a UK-founded brand, it was part of Dairy Crest for many years. In 2019, the Canadian dairy giant Saputo Inc. acquired Dairy Crest, bringing Cathedral City under its global portfolio. Today, Cathedral City remains headquartered in the UK under the Saputo Dairy UK subsidiary while benefiting from the global distribution network of its Canadian parent company.
