The brand's history dates back to 1862 when the first beer was brewed by the monks. Unlike most commercial breweries, Chimay remains under the direct control of the monastic community. The majority of the profits from the sales are dedicated to the monks' needs, as well as to charitable works and local community development in the region.

The Grande Réserve, also known as Chimay Blue, is their flagship dark ale, initially brewed as a Christmas beer but now produced year-round due to its global popularity. It is known for its complex, malty profile with notes of dried fruit and caramel.
