COVAP, which stands for Cooperativa Ganadera del Valle de los Pedroches, is a prominent Spanish livestock cooperative founded in 1959. It originated in the Los Pedroches Valley in the province of Córdoba, Andalusia, when a group of local farmers joined forces to centralize the purchase of raw materials and manage cattle breeding.

Today, COVAP is one of the largest agri-food cooperatives in Spain, operating a fully integrated production model. This "closed-cycle" approach means they control every step of the process, from manufacturing animal feed and raising livestock (cows, sheep, and 100% Ibérico pigs) in the vast dehesa pasturelands to the processing and marketing of the final products. Their manufacturing and processing facilities remain centered in Spain, specifically in Andalusia, Galicia, and Castile-León, ensuring high standards of traceability and quality for their world-renowned Ibérico hams, dairy products, and cheeses.

The brand is owned and operated by the cooperative itself, meaning the ultimate owners are the hundreds of individual farmers who make up the membership. This structure allows the brand to prioritize the social and economic welfare of its rural community while maintaining its traditional craftsmanship and environmental sustainability.
