It is brewed by the Hijos de Rivera brewery, which has maintained its headquarters and sole production site in A Coruña, Galicia, since its founding in 1906. This commitment to local manufacturing is a hallmark of the brand, ensuring that every bottle is produced using water from a protected natural reservoir in the region.

The brand was originally founded by José María Rivera Corral after his travels in Cuba and Mexico. Unlike many global beverage brands that have been acquired by multinational conglomerates, Estrella Galicia remains 100% family-owned. It is currently managed by the fourth and fifth generations of the Rivera family under the parent company Corporación Hijos de Rivera. The 0,0 version, launched in 2011, is produced through a specialized 'interrupted fermentation' process that preserves the flavor profile of the original lager without the alcohol content.
