Echt Hällische Schinkenwurst and Bierschinken are premium sausage specialties from the Hohenlohe region in Baden-Württemberg, Germany. These products are manufactured by the Bäuerliche Erzeugergemeinschaft Schwäbisch Hall (BESH), a farmers' cooperative founded to preserve the Schwäbisch-Hällisches Landschwein, a traditional pig breed.

The production adheres to a strict 'purity law' (Reinheitsgebot), emphasizing the use of high-quality pork from member farms, natural organic spices, and the traditional 'warm-meat processing' technique. This method involves processing the meat immediately after slaughter to maintain flavor and texture without the need for artificial binders or flavor enhancers like glutamate.

Ownership remains entirely within the cooperative, which is owned by approximately 1,500 member farmers. This structure ensures a closed production chain from the farm to the processing facility in Schwäbisch Hall and Wolpertshausen, guaranteeing transparency and regional authenticity.
