Castello Aged Havarti cheese

Castello Aged Havarti is a premium specialty cheese characterized by its rich, buttery flavor and the unique crunch of protein crystals formed during its 12-month maturation process. This specific variety carries the European Union's Protected Geographical Indication (PGI) status, ensuring it is produced in Denmark according to traditional methods and high standards of quality.

The brand's history dates back to 1893, when Danish master cheesemaker Rasmus Tholstrup founded the company. Tholstrup was a pioneer in artisanal cheesemaking, often looking to European influences to innovate his recipes. Today, the Havarti line remains a staple of the brand, produced primarily at the Nr Vium dairy in Denmark using milk from local Western Jutland farms.

Since 2006, the Castello brand has been owned by Arla Foods, a major international dairy cooperative headquartered in Denmark. Arla Foods is a farmer-owned entity, representing thousands of dairy farmers across Europe. Under Arla's ownership, Castello has grown into a global brand recognized for its wide range of blue, creamy, and aged cheeses.
