Les Jamelles Viognier is a distinguished white wine from the renowned Les Jamelles winery, celebrated for its pure and intense varietal expressions. This wine is crafted entirely from Viognier grapes, a variety known for its aromatic complexity and full-bodied character. The grapes are sourced from select terroirs in the Languedoc region, notably the Thau lagoon basin and the dried-up marsh of Marseillette. These areas are characterized by calcareous clay soils with rounded river stones and slightly salty, loamy clay soils, respectively. Such unique terroirs, combined with the region's high temperatures, facilitate optimal grape ripening, leading to the development of rich flavors and maintaining the wine's freshness. The winemaking process involves harvesting the grapes at their peak ripeness, followed by slow fermentation in stainless steel tanks under controlled temperatures. A significant portion of the wine undergoes malolactic fermentation, enhancing its aromatic complexity. The wine is then aged on fine lees for 6 to 9 months, contributing to its roundness and depth. The resulting Les Jamelles Viognier is a pale gold wine, rich and fragrant, with notes of apricot, white peach, and floral nuances like acacia blossom. On the palate, it offers remarkable freshness and a harmonious balance between richness and acidity, finishing with a hint of nougat. This wine pairs excellently with Asian cuisine, seafood, fish, asparagus, and fruit tarts.
