Cantillon Brewery, established in 1900 by Paul Cantillon and his wife Marie Troch, is a traditional family-owned brewery located in Anderlecht, Brussels, Belgium. The brewery exclusively produces lambic beers, including Gueuze, Faro, and Kriek, using traditional methods such as spontaneous fermentation and aging in oak casks. As of 2011, the brewery is owned by Jean-Pierre Van Roy, the fourth-generation brewer in the Cantillon family. In 1999, Cantillon switched entirely to certified organic brewing, except for its fruit beers, for which there are simply not enough organic cherries and raspberries available.
