Paulus Beer Cheese is a distinctive Dutch Gouda cheese infused with beer, produced using traditional methods from the Paulus Abbey in Utrecht. The Paulus Abbey, established in the 16th century, was renowned for its own brewhouse where Benedictine monks brewed beer for the local community. In 1580, the abbey was dissolved, and the beer recipe was lost for centuries. In recent years, the original recipe was rediscovered, leading to the creation of Paulus Beer Cheese. This cheese combines the gentle saltiness of well-matured Gouda with the fresh, slightly bitter fruitiness of Paulus Beer, offering a unique flavor profile. The cheese is aged for approximately eight weeks to achieve its optimal taste. Paulus Beer Cheese is produced by Daily-Dairy, a company based in the Netherlands that specializes in artisanal cheeses, and is available through various retailers, including Peacock Cheese Company and igourmet.
