Tonkatsu is a Japanese dish consisting of deep-fried pork cutlets, typically served with shredded cabbage and rice. When placed between slices of bread, it forms a sandwich known as a tonkatsu sandwich. This dish is a popular example of yōshoku, Western-style Japanese cuisine introduced to Japan. The pork cutlet is usually salted, peppered, dredged lightly in flour, dipped into beaten egg, and then coated with panko (bread crumbs) before being deep-fried. It is commonly eaten with a thick Worcestershire-style sauce called tonkatsu sauce or simply sōsu, karashi (mustard), and perhaps a slice of lemon. While tonkatsu originated in Japan, similar sandwiches are enjoyed in other countries, with variations in preparation and ingredients.
