Æblerov cider

Æblerov is a Danish cider producer founded in 2011 by Morten Sylvest-Noer and Christopher Melin. They began by collecting fallen apples from local gardens in Copenhagen and producing small batches of naturally fermented cider in a garage. Over time, Æblerov expanded its production and now collaborates with organic fruit growers across Denmark, sourcing a variety of apple and pear types, including Rød Aroma, Holsteiner Cox, Topaz, Pigeon, Alkmene, Discovery, Conference, Anna, and Herrepære. Their ciders are known for being lean, crisp, and acidic, often reminiscent of wine rather than traditional cider. Æblerov's commitment to using indigenous Nordic fruits and natural fermentation methods has positioned them as a leading producer in the Scandinavian cider movement. The company operates independently, with no known subsidiaries or external ownership.
