Tabasco sauce is one of the most recognizable condiments in the world, originating on Avery Island, Louisiana, in 1868. It was created by Edmund McIlhenny, who planted Capsicum frutescens seeds and aged the mashed peppers in white oak barrels with salt and vinegar. This artisanal process remains the foundation of the brand's identity today, as the sauce is still produced on the same island by the descendants of the McIlhenny family.
While the brand has expanded its global footprint to over 195 countries and territories, its heart remains in Louisiana. The manufacturing process is deeply tied to the local geography, utilizing the naturally occurring salt domes of Avery Island for both the seasoning of the peppers and the storage during the three-year fermentation process.
McIlhenny Company remains a privately held, family-owned enterprise. Unlike many other global food brands that have been acquired by large conglomerates, Tabasco has maintained its independence for over 150 years. This continuity of ownership ensures that the traditional original recipe and production methods are preserved for future generations.
