Salame Cremona g.g.A. Deluxe is a premium Italian salami produced under the Protected Geographical Indication (g.g.A.) status, ensuring traditional production methods and regional authenticity. The salami is crafted from selected cuts of Italian heavy pork, seasoned with salt, crushed garlic, and optionally white or red wine, sugar, dextrose, fructose, lactose, ascorbic acid, and sodium or potassium nitrite. The mixture is then stuffed into natural casings and undergoes a maturation process lasting from a minimum of five weeks for smaller sizes to over four months for larger ones. This extended aging results in a soft texture and a deep red color that transitions to white in the fatty parts. The salami's flavor is aromatic and spicy, making it a perfect accompaniment to bread and various fruits. The production is strictly regulated by the Consorzio di Tutela Salame Cremona, which oversees the use of pork from pigs farmed in the Piedmont, Lombardy, Emilia-Romagna, and Veneto regions, ensuring the product's authenticity and quality.
