Domaine de l'Évêché is a family-owned winery situated in the Mercurey appellation of Burgundy, France. The estate specializes in producing wines that authentically represent the unique terroir of the region. Their Mercurey Les Ormeaux 2022 Red Wine is crafted from Pinot Noir grapes sourced from a 1-hectare vineyard with deep clay-limestone soils on a southeast-facing hillside. The vines have an average age of 40 years, contributing to the wine's depth and complexity. The winemaking process involves mechanical harvesting, sorting, destemming, and gravity feeding into vats. A cold prefermentation is followed by alcoholic fermentation with automatic temperature control, and maceration lasts for 20 days. The wine is aged in oak barrels (20% new) for 12 months, resulting in a wine with an alcohol content of 14%. Tasting notes describe the wine as having a transparent robe with purple highlights, offering a delicate perfume reminiscent of wild blackberries and spices. On the palate, it presents a precise, juicy structure with peppery and dense flavors, akin to thick, soft red velvet, while retaining the delicacy of Pinot Noir.
