Bertolli was founded in 1865 by Francesco and Caterina Bertolli in Lucca, Tuscany, Italy. Originally a small grocery store selling regional produce, it became a pioneer in exporting olive oil to the United States. Over the decades, the brand evolved from a family business into a global household name, eventually undergoing several corporate ownership changes including acquisition by Unilever in 1994.

In 2008, the olive oil division was sold to the Spanish multinational Deoleo S.A. (formerly Grupo SOS). Today, while the Bertolli name is synonymous with Italian heritage, the oils are sourced from a variety of Mediterranean regions including Greece, Tunisia, and Spain to maintain a consistent flavor profile. The processing and bottling typically occur at Deoleo's facilities in Italy and Spain. The brand trademark itself is owned by the Japanese company Mizkan Holdings, which licenses the name to different companies for specific product categories like oil, spreads, and sauces.
