They collaborated with Iowa State University dairy researchers to develop a process for creating blue cheese from cow's milk, aiming to replicate the flavors of traditional European blue cheeses like Roquefort. The cheese is made from the milk of the Maytag family's Holstein cattle and is aged in caves to develop its distinctive flavor and texture. The company remains family-owned and operated, with no known subsidiaries owning the brand locally.
