Omnipollo Pista Soft Serve

Omnipollo Pista is a specialty craft beer, specifically a pastry stout designed to mimic the flavors of a pistachio soft-serve sundae with chocolate sauce. The brand was founded in Stockholm, Sweden, in 2010 by brewer Henok Fentie and artist Karl Grandin.

Omnipollo operates as a 'gypsy brewery,' meaning they traditionally did not own their own brewing equipment but instead traveled to various esteemed breweries around the world to produce their recipes. Consequently, their products are manufactured in multiple countries including Sweden, Belgium, and the United States (often at Dugges Bryggeri or Brouwerij De Proefbrouwerij). Recently, they have established a home base in a converted church in Sundbyberg, Sweden, though international production continues for global distribution. The brand remains independently owned by its original founders.
