The brand, Merchant Gourmet, was founded in the United Kingdom in 1995 with the mission of bringing high-quality, gourmet ingredients to home cooks in a convenient ready-to-eat format.

The lentils themselves are sourced from Le Puy-en-Velay in the Auvergne region of France, where they hold an Appellation d'Origine Protégée (AOP) status. While the lentils are grown and often primary processed in France to maintain their authentic origin, the final pouching and distribution are managed by the parent company in the UK. Merchant Gourmet is currently owned by Barroccu & Co, a British family-owned business specializing in the distribution and marketing of high-end food products.
