La Cocina Tortilla Chips originated in St. Adolphe, Manitoba, Canada, where the brand was founded in 1984 by the Boulet family. Known for traditional kettle-cooked tortilla chips made using simple, gluten-free ingredients, La Cocina established a loyal following across Western Canada and international specialty markets.

In December 2019, Winnipeg-based food conglomerate Pollard Food LP (a division of Pollard Window and Doors / Pollard family investments, operating under Pollard Enterprises / La Cocina Foods) acquired the brand. Production remains proudly rooted in Manitoba, Canada.

Today, La Cocina tortilla chips are widely distributed across North America and specialty global snack importers, offering classic gluten-free corn tortilla chips prepared in the traditional manner.
