Lyons & Co. through its subsidiary, Symbol Biscuits, in Blackpool, England. The cookies were inspired by American-style chocolate chip cookies, leading to the adoption of the name "Maryland," though the product itself is entirely British in origin.

Over the decades, the brand underwent several ownership changes, moving from Lyons to Hillsdown Holdings in 1994, and then becoming part of Burton's Foods in 2000 after a series of private equity mergers. In 2021, the brand's trajectory took a global turn when Burton's Biscuit Company was acquired by a Ferrero-related entity. Today, the brand is managed under the Fox's Burton’s Companies (FBC) umbrella, uniting two of the UK's most historic biscuit manufacturers under the stewardship of the Italian confectionery giant, Ferrero.

Production remains heavily centered in the United Kingdom, primarily at the historic bakeries in Blackpool and other regional sites. Despite its international ownership, the recipe retains its classic crunchy, shortbread-like texture that has made it a staple in British households for over 70 years.
